A brief introduction to production technology.


Distillation and rectification

 

 

Distillation (distillation) is a process in the course of which volatile components (vapors) evaporate from a fermented mixture and condense, turning into moonshine. The process itself is quite simple. The boiling point of water is + 100 ° C, alcohol - + 78 ° C, the evaporation of alcohol between two temperatures occurs faster than water. When cooled, the alcohol condenses. Thus, the distillate can be distilled many times to increase its alcohol content.


It should be noted that the first 100 g of moonshine obtained have a high strength and at least a high percentage of harmful impurities (volatile acids, esters, aldehydes). That is why, the first drops are best poured into the sink or used to light wood or something else. To use as an alcoholic drink is extremely harmful, and the actual strength is different from that shown by the alcohol meter. This is due to the fact that the density of impurities is lower than the density of alcohol, as a result of which there is a distortion of the indicators of the alcohol meter in favor of an imaginary overestimation of the degree. The first hundred grams received are called the “head”, which should be cut off from the main distillate.


In a cube, which is filled with braga and put on a heat source, over time, the alcohol concentration decreases. This is indicated by an increase in temperature in the condenser (refrigerator). It does not make sense to continue the process of distillation to a temperature of 100 degrees Celsius - water will evaporate from the cube, since the alcohol in the brew has run out.


The second unsuitable part for use with a high content of harmful impurities is called "tails" (contains fusel spirits, methanol). Differ in an unpleasant smell. They go after the strength of moonshine drops to 40%. The tail part, unlike the “heads”, can be used for secondary distillation, while the “heads” can be used only for technical purposes.



Rectification process

 

 

This type of distillation is used to produce ethanol. A distillation column is a device that separates liquid mixtures into parts, yielding pure alcohol without aromas and flavors, harmful fusel oils, acetone, methanol and other unpleasant substances (a distillation unit is a synonym for a distillation column). Rectification allows you to make tinctures and other drinks without the risk of poisoning with harmful chemical elements.


The column can perform the function of a distiller, getting pure moonshine.


Rectification without a column gives less strength than with a column, as well as low productivity.



Distillation and distillation differences


With the help of a distiller, moonshine is obtained, while rectification allows you to get the purest alcohol without impurities from raw alcohol diluted to 40%. And this means that without a moonshine still can not do. To use a distillation column in order to drive the mash means to cause it to inevitably clog the column at the bottom.


Modern moonshine stills, supplemented by reflux condensers and other elements, make it possible to produce pure moonshine. In addition, now you can buy an alcohol distiller with an already built-in column, i.e. operating in either distillation or distillation mode, depending on your purpose.


In general, both products are not ready for use immediately after distillation. Alcohol must be diluted, moonshine - cleaned. One cannot do without the other, but here it all depends on the goal.
